Easy Christmas Star Cookies

Ingredients
- 250 g self-raising flour (plus extra for rolling)
- 125 g cold butter, cut into small cubes (plus extra for greasing)
- ½ teaspoon cinnamon
- ½ teaspoon ginger
- 125 g caster sugar
- 1 egg, beaten
Instructions
- Preheat the oven to 200°C (180°C fan). Lightly grease two large baking trays with butter.
- Put the flour into a large bowl and add the butter cubes. Rub them together with your fingers until the mixture looks like breadcrumbs.
- Mix in the sugar, cinnamon, and ginger. Stir in the beaten egg. If the dough doesn’t come together, add a tiny splash of water, but be careful not to add too much.
- Once the dough forms, bring it together into a ball using your hands.
- Dust your work surface with a little flour. Place the dough on it and roll it out to about 5mm thick.
- Use star-shaped cutters to cut out the biscuits. Place them on the baking trays, leaving a little space between each one.
- Gather the leftover dough, roll it out again, and cut more stars. Repeat until all the dough is used.
- Bake the biscuits for 10–15 minutes, or until they are light golden on top and slightly darker at the edges. Start checking after 10 minutes to avoid overbaking.
- Let the biscuits cool on a wire rack. Enjoy warm or cold. Once cool, store them in an airtight container for up to a week. Decorate with icing sugar or piped icing if desired.
